Couple preparing to make, sell cheese

A Waimate couple hope the launch of their new cheesemaking business will allow them to spend more time together.
Martyn and Lynne Hall are in the early stages of getting their Queen St premises ready for locally produced cheese.
They planned to have the operation up and running within two months, selling their own brand of cheese.
Mrs Hall said they would specialise with blue cheese, cheddars and goudas.
Mr Hall started out in cheesemaking in 2006 in Oamaru, where he advanced his skills. He moved to Talbot Forest Cheese in 2014, where he is project and operations manager.
“It’s really about taking a raw product and creating something,” Mr Hall said.
“We will source the milk locally from a Jersey herd which has nice, creamy milk.”
Mr and Mrs Hall said they would be making modifications to the store with the installation of a “critical hygiene area”.
Mrs Hall said she had been selling cheese from their Waimate home for a couple of years.
She had owned and operated several specialty businesses over the years and was looking forward to the new venture in Waimate.
